Jean Noel Gaidet is Eleven’s lead guide in France. He’s also a professional French ski instructor and has guided clients throughout France and Italy. Jean Noel’s family has been living in the town of Le Miroir in Sainte Foy for more than six generations, so he knows every corner of the valley. His specialties are off-piste skiing, heli-skiing, backcountry skiing, hiking, mountaineering, rock climbing, and mountain biking. Making Génépi is a long-standing tradition in Jean Noel’s family. Each August, he returns to the mountains to forage for this special flower to make his batch for the upcoming winter to share with friends, family, and Eleven guests at Chalet Pelerin and Chalet Hibou.
